This exquisite anchovy lacks bones, has a reddish-brown color, and has a texture that is firm and fleshy. Remove from the refrigerator 2 hours prior to serving. Open the can 30 minutes prior to serving to facilitate oxygenation. When ready to serve, grab toothpicks if you're planning to serve them as hors d'oeuvre, or use a fork to place them on top of your favorite dishes.
